apparently, Yeast is a plant– a one-celled plant that will grow if you “feed it” sugar. As a plant, it is more properly called a fungi.

“When we buy it, it is alive (one hopes) but inactive: under the right conditions, that is with a little warmth and the addition of some water, it is activated and releases the gas that will raise the dough. All this activity ceases only when the dough is placed in the oven and the extreme temperature kills off the yeast.”

“Even though they are single celled, you may find them in colonies. They reproduce very quickly and hang out together. It takes a lot of them (because they are so small) to get a lot of work done. “
